This qualification is designed to provide learning which is relevant to all catering business environments and meets the National Occupational Standards, providing an Award which will be recognised by any business operator, in Berwick, Northumberland and throughout the United Kingdom. Who needs this qualification?

Anyone working in a catering setting where food is prepared, cooked and handled.

Candidates do not require to hold any specific qualifications prior to undertaking study.

Learning outcomes

  • Firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved;
  • Understanding of how to control food safety risks (personal hygiene, food storage, cooking and handling);
  • Confidence and expertise to safely deliver quality food to customers.
  • The qualification covers the following topics:
    · Legislation, including the Food Safety Act
    · Food safety and hygiene hazards
    · Temperature control
    · Refrigeration, chilling and cold holding
    · Cooking, hot holding and reheating
    · Food handling
    · Principles of safe food storage
    · Cleaning
    · Food premises and equipment

How often should this qualification be renewed?

The qualification is recommended for renewal at least every three years.

Duration: Six hours for delivery
Assessment: One hour multiple choice examination. 30 questions with a pass mark of 20
